  • Non-Critical, Minor or Good Retail Practice Violations: These violations are not directly related to the cause of illness or injury, but if uncorrected, could negatively affect the operation of the facility, such as maintenance and cleanliness.

Inspector Comments: The temperature of the dish surface after the final rinse of the high-temperature-sanitizing dish machine did not measure at least 160°F. Corrective Action: The dish machine was run through several cycles until the temperature reached at least 160°F. The inspector advised the person in charge to have the machine serviced to ensure it consistently reaches the minimum sanitizing temperature.
