  • Critical, Major, or Foodborne Illness Risk Factor Violations: These violations are more likely than other violations to contribute to illness or injury. Inspectors work with operators to make sure that these violations are corrected whenever feasible before they leave the establishment. A re-inspection may be scheduled to verify compliance.
  • Non-Critical, Minor or Good Retail Practice Violations: These violations are not directly related to the cause of illness or injury, but if uncorrected, could negatively affect the operation of the facility, such as maintenance and cleanliness.

Inspector Comments: An employee was observed in the main kitchen warwashing area handling dirty dishes then clean dishes without first washing their hands (priority). Corrective Action: Discussed hand washing with the operator.

Adequate handwashing sinks properly supplied and accessible
Inspector Comments: An employee in the Grand Manager Station was observed washing their hands in the preparation sink (priority foundation). Corrective Action: Discussed hand washing with the operator. An employee in the main kitchen was observed rinsing a wiping cloth in the central hand sink (priority foundation). Corrective Action: Discussed hand sink usage with the operator.

Compliance with variance / specialized process / HACCP
Inspector Comments: A vacuum packing machine was present in the Grand Manager station and per the manager was being used to vacuum seal raw meat before freezing without an approved HACCP plan (priority foundation). Corrective Action: The vacuum sealing (reduced oxygen packing) must cease until a HACCP plan is approved by TCHD.
