Inspector Comments: An employee in the Grand Manager Station was observed washing their hands in the preparation sink (priority foundation). Corrective Action: Discussed hand washing with the operator.
An employee in the main kitchen was observed rinsing a wiping cloth in the central hand sink (priority foundation). Corrective Action: Discussed hand sink usage with the operator.

Inspector Comments: A vacuum packing machine was present in the Grand Manager station and per the manager was being used to vacuum seal raw meat before freezing without an approved HACCP plan (priority foundation). Corrective Action: The vacuum sealing (reduced oxygen packing) must cease until a HACCP plan is approved by TCHD.
