  • Non-Critical, Minor or Good Retail Practice Violations: These violations are not directly related to the cause of illness or injury, but if uncorrected, could negatively affect the operation of the facility, such as maintenance and cleanliness.

Adequate handwashing sinks properly supplied and accessible
Inspector Comments: A box was stored inside the basin of the back hand sink. Corrective action: the person in charge moved the box out of the sink.
23 - Foodborne Illness Risk Factors
Proper date marking and disposition
Inspector Comments: Chiles rellenos, tamales, and shredded chicken in the reach-in refrigerator of the kitchen, and menudo and tamales in the walk-in refrigerator were not marked with a preparation date to be kept at the facility for 7 days or less. Corrective action: the person in charge marked the items with their preparation date.
