  • Non-Critical, Minor or Good Retail Practice Violations: These violations are not directly related to the cause of illness or injury, but if uncorrected, could negatively affect the operation of the facility, such as maintenance and cleanliness.

Inspector Comments: 3-202.15 Package Integrity (Pf) A dented can of jalapeņos was stored with wholesome cans on the shelf across from the freezer. Corrective action: The person in charge moved the dented can away from wholesome cans to be opened and discarded later.

Inspector Comments: 3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) The following items at the salsa bar were stored above 41°F: diced tomatoes (50° F), pico de gallo (48-50° F), and corn salsa (45-49° F). Corrective action: The person in charge added ice to the unit to help cool down the food products containing cut tomatoes and using a TAPHC plan was discussed moving forward.

Inspector Comments: 7-207.11 Restriction and Storage-Medicines (P) Numerous bottles of employee medicine were stored above the cold top reach in refrigerator on the cook line. Corrective action: The person in charge moved the employee medicine for proper storage to prevent contamination. 7-204.11 Sanitizers, Criteria-Chemicals (P) The chlorine residual measured higher then 200ppm in the sanitizer bucket across from the ware washing area. Corrective action: The person in charge added water to the sanitizer bucket to ensure the chlorine residual was below 200ppm.

Inspector Comments: 6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods (C) The FRP paneling near the food preparation sink was separating from the wall.
