Inspector Comments: 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (Pf) - The solution in the sanitizer spray bottle in the service area measured less than 200 ppm quaternary ammonium. Corrective action: The person in charge corrected the solution to measure 200-400 ppm quaternary ammonium.

Inspector Comments: 3-501.17 Ready-To-Eat Time/Temperature Control for Safety Food, Date Marking (Pf) - Date marking was not utilized for Time/Temperature Control for Safety Foods kept longer than 24 hours throughout the facility. Corrective action: The person in charge was educated on date marking procedures.

Inspector Comments: 3-501.13 Thawing (C) - Raw beef was observed thawing in stagnant water (61°F) near the three compartment sink. Corrective action: The person in charge was educated on proper thawing processes.
