-Parasite destruction paperwork for the cold smoked salmon served raw was not available at the facility.
Corrective action: Discussed contacting the distributor company to obtain a copy of the parasite destruction paperwork with the person in charge.

Inspector Comments: An employee on the service line was observed cracking raw shell unpasteurized eggs, taking off their gloves and then handling utensils for serving ready-to-eat food items and wrapped ready-to-eat sandwiches without first washing their hands. (Priority)
Corrective Action: Education provided about proper hand washing.
