Unseparated raw shelled eggs were stored next to ready-to-eat vegetables in the walk-in cooler.
Corrective action: The operator was educated on how to properly store refrigerated raw foods and ready to eat foods.

4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (P)
The residual quaternary ammonium concentration in the three compartment sink measured less than 200ppm.
Corrective action: The operator was told to use a chlorine sanitizer in their three compartment sink, and the operator agreed to have their quaternary ammonium dispenser serviced.

A pot of boiled licorice marinade (71°F) on the stove to the right of the cookline measured less than 135°F.
Corrective action: The operator was educated regarding proper holding temperatures.

Several 2 oz containers of cooked ginger sauce that were held over 24 hours did not have a date of prep or date of discard.
Corrective action: The operator was educated on proper date marking procedures of TCS foods.

The facility was holding roast pork and roast duck for four hour increments with no written procedures approved by the regulatory authority.
Corrective action: The operator was educated on proper TAPHC procedures during the time of inspection, and emailed guidelines for establishing a TAPHC plan with the regulatory authority on 2/9/2022.
