Inspector Comments: 5-202.12 Handwashing Sinks, Installation (Pf) - The hot water of the handwashing sink to the left of the three compartment sink was turned off due to a continual leak, making it impossible to supply water above 100°F to the hand sink. Corrective action: Person in charge will submit a maintenance request to repair the hot water line.

Inspector Comments: 3-501.15 Cooling Methods (Pf) - Grilled chicken and fried chicken (100-118°F) was observed cooling while covered in saran wrap and at room temperature on a tray across from the deep frying station. Deep fried chicken nuggets (70-98°F) were cooling while covered in a sealed bag in the walk in freezer. Fried chicken (67-106°F) and chopped grilled chicken (86-90°F) was cooling while covered saran wrapped in the walk in refrigerator. Corrective action: Education was provided on proper cooling procedures.
