Inspector Comments: 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (P) The concentration of the sanitizer in the 3 compartment sink during manual ware washing operations did not reach at least 150 ppm residual quaternary ammonium. Corrective action: the sanitizer was dumped and a new batch that reached at least 150 ppm was made.
