Inspector Comments: 2-301.12 Cleaning Procedure (P):
An employee was observed coming back into the kitchen from using the restroom and only washing their hands for 10 seconds before preparing food for a customer. An employee was observed wiping their gloved hands on their apron when preparing food in the back food preparation area. Corrective Action: Inspector educated the person in charge on hand washing.

Inspector Comments: Shredded lettuce located in the cold top refrigerator on the cook line was between 46-51°F. Salsa that was between 47-51°F stored in the cook line cold top were above 41°F. Inspector had employees move lettuce and salsa to the walk-in refrigerator.
