Inspector Comments: 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (P) The sanitizer cycle of the dish machine did not produce 50ppm of chlorine residual at the time of the inspection. Corrective action: Person in charge stated that they would contact their chemical company immediately and they would use the three compartment sink for dish washing until the dish machine could be fixed.

Corrective action: Inspector provided the employee illness flow chart handout at the time of inspection. Discussed the importance of having an employee sick policy in place with the person in charge.
