The facility did not have an employee sick policy in place.
Corrective action: Inspector provided the employee illness flow chart handout at the time of inspection. Discussed the importance of having an employee sick policy in place with the person in charge.

The sanitizer cycle of the dish machine did not produce 50ppm of chlorine residual at the time of inspection.
Corrective action: Discussed having the dish machine fixed immediately and to use the three compartment sink for all dish washing until the dish machine is fixed.
