Inspectors work with operators to make sure that these violations are corrected whenever feasible before they leave the establishment. A re-inspection may be scheduled to verify compliance.

Inspector Comments: Multiple cheeses in a glass door display refrigerator (operating at 51-53°F) were stored above 41°F. Corrective action: Per the person in charge, these cheeses were stocked the same day in the morning. They were moved to the walk-in refrigerator. The person in charge agreed to service the refrigerator.

Inspector Comments: Several deli meats, including roast beef, ham, and turkey, in the deli refrigerator case were not marked with a date once opened to be used within 7 days. Corrective action: The inspector educated the person in charge on date marking requirements.
48 - Good Retail Practices
Warewashing facilities: installed, maintained, & used; test strips
Inspector Comments: Test strips were not provided for the DDBSA/Lactic Acid sanitizer installed at the three-compartment sink chemical tower. Corrective action: Since the inspector could not verify the concentration of sanitizer, the person in charge verified that the chemical was installed and calibrated by a professional contractor. The inspector emailed the person in charge a link to purchase test strips.
