Inspector Comments: 3-301.11 Preventing Contamination from Hands (P) -An employee was observed cutting onions used for chili cheese hot dogs while touching them with bare hands. Corrective Action: Education was provided regarding using a barrier for all ready to eat foods and staff washed their hands and donned gloves to finish food preparation.

Inspector Comments: 3-501.17 Ready-To-Eat Time/Temperature Control for Safety Food, Date Marking (Pf) -Several food items requiring date marking were not date mark labeled in the walk in refrigerator and cold top refrigerator next to the three compartment sink, including; milk, cut tomatoes, cut lettuce, chicken, and hot dogs. Corrective Action: Education was provided regarding date mark labeling and staff date marked all required food items.

Inspector Comments: 7-201.11 Separation-Storage (P) -Several containers and spray bottles of chemicals were stored directly on top of the preparation table in the back kitchen area. Corrective Action: Staff relocated all of the chemicals to the back storage room to an approved location away from food preparation surfaces, single service articles, and food items.

Inspector Comments: 4-904.11 Kitchenware and Tableware-Preventing Contamination (C) - Single service utensils that were not prewrapped were stored with the lip-contact surface face up and not protected from contamination by employees near the to-go window and front service area.
