Person in charge present, demonstrates knowledge, and performs duties
Inspector Comments: The person in charge did not demonstrate adequate food safety knowledge in regards to cold holding, date marking, and thermometer calibration. Corrective Action: The inspector reviewed date-marking requirements with the person in charge. Educated the operator to calibrate the food probe thermometer in accordance with the manufacturer's specifications. Discussed cold holding temperatures with the person in charge.

Adequate handwashing sinks properly supplied and accessible
Inspector Comments: A large bag was located in the basin of the back kitchen hand sink, making it inaccessible for handwashing. The hand sinks in the display line and kitchen were not equipped with signs to instruct employees to wash their hands. Paper towels were not available at the back kitchen hand sink. Soap was not available at the back kitchen hand sink. Corrective action: The bag was removed, and the inspector reviewed hand sink use with the person in charge. Hand washing signs were left on site. The operator restocked paper towels and refilled soap.

Proper cold holding temperatures
Inspector Comments: Green chili (45°F) and scrambled eggs (47°F) in the single-door refrigerator were above 41°F. Corrective action: The refrigerator thermometer knob was adjusted to hold foods below 41°F.

Inspector Comments: The following food items in the single door stainless steel refrigerator were not properly date marked: scrambled eggs and green chili. Corrective action: The inspector reviewed date-marking requirements with the person in charge.

Inspector Comments: Half and half was 68°F in a carafe at the customer self service station for more than four hours. The product was discarded by the operator and cold holding temperatures were discussed.
