Inspectors work with operators to make sure that these violations are corrected whenever feasible before they leave the establishment. A re-inspection may be scheduled to verify compliance.
  • Non-Critical, Minor or Good Retail Practice Violations: These violations are not directly related to the cause of illness or injury, but if uncorrected, could negatively affect the operation of the facility, such as maintenance and cleanliness.

Proper cold holding temperatures
Inspector Comments: The following food items in the reach in refrigerator by the fryer were stored above 41°F: Ranch (52°F) and shredded cheese (46°F). Five whipped cream cans (48°F-52°F) that requires refrigeration according to the product label were stored above 41°F. Corrective Action: Ranch and shredded cheese was moved to the walk-in refrigerator to maintain the correct temperature. Five whipped cream cans were discarded, see voluntary condemnation.
23 - Foodborne Illness Risk Factors
Proper date marking and disposition
Inspector Comments: An open packet of cooked hot dogs and a container of cooked chicken breast were not properly date marked in the single door reach-in refrigerator. Corrective action: The inspector reviewed date-marking requirements with the person in charge.

Inspector Comments: A food employee with long artificial fingernails was observed working with exposed food.
