4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (P)
- The dish machine measured less than 50 ppm chlorine residual upon inspection.
Corrective action: The employee was instructed to use the three compartment sink until the dish machine can prove to measure 50-200 ppm chlorine residual on the dish surface.

Corrective action: An employee detached the hose and sprayer from the mop sink.
