Soy milk in the walk-in refrigerator was not date-marked once opened to be used or discarded within 7 days. Pizza sauce and ground beef in the walk-in refrigerator were defrosted three days prior to inspection and were not marked with a date to use or discard within 7 days. Corrective action: The inspector educated the person in charge on date-marking requirements.
