Inspector Comments: The kitchen hand sinks did not have signs reminding employees to wash their hands (core).

Inspector Comments: A disinfectant spray bottle was stored next to cups by the front counter. Concentrated detergent and sanitizer were located above the clean side of the three-compartment sink. Single use cups and gloves were stored under chemicals in the back of the kitchen (priority). Corrective Action: Educated the operator to store chemicals below clean dishes and below single use items.

Inspector Comments: Lids by the ice cream machine were stored with their food contact surface exposed (core).

Inspector Comments: The sprayer on the three-compartment sink hung below the flood rim (priority). Corrective Action: Educated the operator to have the sprayer hang above the flood rim on its own.

Inspector Comments: Liquid eggs in the reach-in refrigerator next to the stove were 49°F. Corrective Action: Discussed with manager keeping the container in the refrigerator between use.

Food Temperature Control: Cold hold at 41°f or less
Inspector Comments: Incorrect use of time as a public health control for the following food items while held at room temperature at the cook line taco station: shredded iceberg lettuce 64°F and sliced cheddar 71°F. The following food items were above 41°F at the walk-in refrigerator: chicken and beef tacos 47°F, teriyaki chicken 48°F, sliced ham and shredded cheese mix 47°F, and shredded iceberg lettuce 47°F. Shake mix was 52°F at the front counter shake preparation station. Liquid eggs were 48°F at the cook line reach-in refrigerator.
