Inspections are based on regulations to eliminate risk factors for illness or injury. Every violation is coded indicating the degree of risk in causing an illness or injury.

  • Critical, Major, or Foodborne Illness Risk Factor Violations: These violations are more likely than other violations to contribute to illness or injury. Inspectors work with operators to make sure that these violations are corrected whenever feasible before they leave the establishment. A re-inspection may be scheduled to verify compliance.

Food Temperature Control: Hot hold at 135°f or greater
Inspector Comments: A pan of cooked mashed potatoes (110°F) and a pan of gravy (130°F) were tested at less than 135°F in the central steam well of the central kitchen preparation/assembly area. Cooked chicken in a cylinder fryer basket in the back chicken frying area were tested at less than 135°F(118°F). Mashed potatoes and gravy were moved to a different steam well that held the proper temperature and chicken was fried again and then put into a warming oven.

Inspector Comments: The sprayer hose on the three compartment sink hung below the flood rim and was not backflow preventative. Proper backflow equipment was discussed and the spray hose was raised above the flood rim.
