Inspector Comments: Hot water was not available in the back kitchen hand sink. A bottle of soap and work gloves were stored in the basin of the back kitchen hand washing sink. Corrective action: The operator agreed to place a maintenance request. The bottle of soap and gloves were removed, and the inspector reviewed hand sink use with the person in charge.

Inspector Comments: The following foods were prepared in a home kitchen as per the operator: fried potatoes, deep-fried shrimp, peppered catfish, jollof rice, banku (fermented corn dough with cassava dough), kenkey (sourdough dumpling) and waakye (rice and beans with meat). The meat products offered for sale were not properly labeled with safe handling instructions. Several boxes of meat products in the walk-in freezer were found to be from an unapproved source. The person in charge did not verify the source of several spices from Ghana. Corrective Action: Unapproved food items were discarded. The inspector informed the operator that food prepared in a private home cannot be sold in a food establishment. Labeling requirements were discussed.
