Inspector Comments: 3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Liquid eggs and liquid egg whites measured 51°F in the reach in refrigerator across from the assembly line. Staff moved the liquid eggs and liquid whites to the walk in refrigerator and have maintenance completed on reach in refrigerator.

Inspector Comments: 4-601.11(C) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils (C) The area was soiled under the soda machine in the lobby area.

Inspector Comments: 6-501.12 Cleaning, Frequency and Restrictions (C) The ventilation fans were soiled in the walk in freezer and walk in refrigerator. The floor was soiled under the soda rack in the mop sink area.

Inspector Comments: Paper towels were not available at the warewashing hand sink. The operator restocked the sink.

Proper cold holding temperatures
Inspector Comments: Cooked chicken, ham, steak and turkey in the cold holding drawer on the prep line measured 46-51°F. Liquid egg mixture and cheese in the reach-in refrigerator on the prep line measured 60°F. The cooked meats were discarded and egg and cheese products were moved to the walk-in refrigerator.

Inspector Comments: The clean dishes on the warewashing area storage rack were stacked wet.

Food Temperature Control: Cold hold at 41°f or less
Inspector Comments: Items in the cold holding drawers on the cook's line were 45°F-50°F. The food items were moved to the walk-in refrigerator.
