Inspector Comments: 6-301.11 Handwashing Cleanser, Availability (Pf) Soap was not available at the hand sink next to the preparation line. Corrective action: The person in charge refilled the soap.

Inspector Comments: 3-202.15 Package Integrity (Pf) Two dented cans of pepperoncini were stored with wholesome cans in the dry storage area. Corrective action: Discussed dented can policy with the person in charge. The cans were moved to be returned.

Inspector Comments: 3-501.16(A)(1) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Cooked sausage (130°F) and cooked eggs (120°F) were stored below 135°F in the hot holding unit. Corrective action: Discussed always hot holding at 135°F and above with the person in charge. Additional water was added to the unit and the items were taken out of a secondary container and placed directly into the container in the unit.
