Inspector Comments: 3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Containers of cream cheese (47F) and a croissant, egg, and sausage sandwich (44F) in the reach in fridge under the microwave were held above 41F. Corrective action: Various sandwiches in the refrigerator were relocated to a freezer to be rapidly cooled. The above items were voluntarily discarded. See voluntary condemnation. The operator submitted a ticket to have the refrigerator serviced.

Inspector Comments: 3-304.14 Wiping Cloths, Use Limitation (C) The sanitizer bucket near the dump sink across from the espresso machine had a concentration of less than 150ppm residual quaternary ammonium.

Inspector Comments: Plain cheesecake and white chocolate raspberry cheesecake were 44°F in the display refrigerator. The manager agreed to turn the unit down and monitor food temperatures to be at most 41°F.
