Inspector Comments:
3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P)
Containers of cream cheese (47F) and a croissant, egg, and sausage sandwich (44F) in the reach in fridge under the microwave were held above 41F.
Corrective action: Various sandwiches in the refrigerator were relocated to a freezer to be rapidly cooled. The above items were voluntarily discarded. See voluntary condemnation. The operator submitted a ticket to have the refrigerator serviced.

Inspector Comments: An employee in the cafe wiped their hands on their apron several times. The employee was educated to wipe wet hands on a paper towel and discard or wash hands.

Inspector Comments: Plain cheesecake and white chocolate raspberry cheesecake were 44°F in the display refrigerator. The manager agreed to turn the unit down and monitor food temperatures to be at most 41°F.
