Inspector Comments: 2-102.12(A) Certified Food Protection Manager (C) -The facility did not have a valid certified food protection manager at the time of the inspection. Facility will obtain a food protection manager certification by the end of the year.

Inspector Comments: 2-301.14 When to Wash (P) - Several employees were observed donning gloves without washing their hands first before preparing sandwiches in the kitchen. Corrective action: Education was provided on when to wash hands.

Inspector Comments: 3-302.11 Packaged and Unpackaged Food-Separation, Packaging, and Segregation (P) - Raw eggs were stored above cooked ground beef in the two door reach in refrigerator closest to the freezer. Corrective action: Operator rearranged the food items based on their internal cooking temperature.

Inspector Comments: 3-501.17 Ready-To-Eat Time/Temperature Control for Safety Food, Date Marking (Pf) - Several TCS and ready-to-eat food items in the two door reach in refrigerators were not marked with a discard date. Corrective action: Education was provided on date marking ready-to-eat and TCS food items that are being kept longer than 24 hours and discarding them after seven days.

Warewashing facilities: installed, maintained, & used; test strips
Inspector Comments: 4-302.14 Sanitizing Solutions, Testing Devices (Pf) - Quaternary ammonium test strips were not available for the sanitizer being used in the kitchen. Corrective action: Operator will obtain test strips and email a photo to TCHD. Follow up needed.

Food Temperature Control: Cold hold at 41°f or less
Inspector Comments: Lettuce and shredded cheese were 57°F in the tall reach-in refrigerator next to the steam table. The lettuce and cheese was transported from another facility and had been out of temperature control during transit. Cold holding was discussed and the facility will utilize a cooler when transporting food.
