Inspector Comments: 3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) -The following TCS food items stored in walk-in cooler #1 measured 45°F and had been out of temperature for more than 4 hours; bologna, turkey, shredded cheese, hard boiled eggs, cottage cheese, and cream cheese cups. Corrective Action: Staff discarded all of the food items and all TCS food will be stored in the other walk-in coolers until cooler #1 maintains a temperature at 41°F or below.

Inspector Comments: Paper towels were unavailable at the kosher prep area hand sink. A bucket was present in the basin of the bakery hand sink. Trash bags were present in the basin of the warewashing hand sink. The paper towels were replaced and the items were moved from the sinks.
