Inspector Comments: 3-501.15 Cooling Methods (Pf): Cooked hash browns were observed cooling in large closed cartons at room temperature by the dish washing area. Corrective Action: Potatoes were separated into small open containers and placed in the walk-in refrigerator to rapidly cool. Education on proper cooling methods was also provided.
