Inspectors Comments: Observed no residual chlorine in the final rinse cycle of the mechanical dishwasher.
As this facility was still "closed to the public", this is not a major violation.
Please repair this unit so that the concentration level of the residual chlorine from the final rinse cycle of this unit reads 50ppm at all times.
The facility may use Garde Manger's 3-compartment sink in the mean time as it is directly adjacent to this facility.

Inspectors Comments: a) Measured the ambient temperature of the 1-door Vulcan cooler at 45F at the time of inspection.
b) Measured the ambient temperature of the 4-door cooler at 60F at the time of inspection.
Please repair these units immediately so that all cold food items are held at or below 41F at all times. All PHFs have been VC&D during the inspection.
Note: This facility was closed for 3 days and there was a filming shoot. Per Staff, the filming crew had turned off all refrigeration units. Please monitor these units to ensure the ambient temperature is reading below 41F prior to opening/serving PHFs.
