Inspection Information

Inspections are based on regulations that are designed to eliminate risk factors for food borne disease. Each violation of these regulations is listed under the inspection.
Violation Types
Priority (P): The highest risk violations which are directly related to an increased risk of foodborne illness. Examples include improper handwashing, unsafe food temperatures.
Priority foundation (Pf): Violations that can create a high risk (Priority) violation. Examples include lack of soap at a handsink, no calibrated thermometer, no test strips to check sanitizer levels.
Core (C): Lower risk violations. Examples include general maintenance of facility (floors, walls, ceilings).
 
Correction Requirements: (P) and (Pf) violations must be corrected immediately when possible. Follow-up inspections occur to ensure all of these violations have been resolved if not corrected during the routine inspection. (C) violation corrections are verified at the next routine inspection.

  6-501.12 - CORE
 Violation Comments:The floors of the facility near the dish washing area had a significant build up of dust and dirt. All facilities must be cleaned frequently enough to prevent the build up of dirt and dust. To correct: Clean the floors.
  4-903.11 - CORE
 Violation Comments:A box of single use cups were stored on the ground near the hand sink by the bear taps. All single use articles such as cups, must be stored at least 6 inches off the ground to avoid accidental contamination. Corrected on site: The person in charge moved the cups so they were off the ground.
  4-302.14 - PRIORITY FOUNDATION
 Violation Comments:There was no testing kit available for the Chlorine sanitizer used in the dish washer. All facilities must have testing kits available for all sanitizer solutions used. This is to ensure sanitizing solutions are strong enough to kill harmful pathogens. To correct: Acquire chlorine test strips for this facility. A proof of correction is required for this violation with in 14 days.

  4-501.114 - PRIORITY
 Violation Comments:Chlorine sanitizer in the dish machine was measured as less than 25 ppm according to inspectors test kit. Chlorine sanitizer used for sanitization step in a ware washing dish machine must be concentrated enough to properly sanitize dishes and destroy potentially hazardous organisms. Corrected on site: Person in charge replace sanitizer with a new bottle and primed the machine. The dish machine sanitizer measured at greater than 50ppm. This is within approved levels.
  4-302.14 - PRIORITY FOUNDATION
 Violation Comments:The facility had no sanitizer test strips available for the dish machine’s chlorine sanitizer. All facilities must have sanitizer test strips for all types of sanitizer to ensure proper concentration levels in all sanitizer solutions. Corrected on site: The person in charge took extra test strips from another facility in the raceway and brought it to the North facility. Person in charge retrained staff when to check sanitizer levels.
  3-501.17 - PRIORITY FOUNDATION
 Violation Comments:There was beer cheese in the cooler nearest to the dish area that was not date marked and in crockpot serving tins. The person in charge indicated they had cooked the cheese before and intended to reheat the cheese for service. Potentially hazardous food that is kept longer than a day and held cold must be date marked for 7 days to prevent the growth of Listeria. To correct: Either freeze or throw away any cheese or cooked meats at the end of race days as races are 8 days apart and all leftover cooked food must be discarded after 7 days. Date mark food frozen this way with the prep date, the freeze day, and the use by day once the product is thawed. Temporary correction: The person in charge discarded the cheeses. A follow up is required for this violation with-in the next 10 days.
  6-501.12 - CORE
 Violation Comments:There is a fan outside the freezer that has a build up of dust and debris on the cage. All areas of the facility must be maintained clean to prevent accidental contamination of food. To correct: Clean the fan. This is the 3rd citation in a row for this violation, further failure to comply will lead to a 0 citation.
  6-202.15 - CORE
 Violation Comments:The outer door on the north end of the kitchen was open and had no screen door or automatic closing device. Outer doors to a facilities kitchen must be solid and self closing to prevent the entry of pests such as flying insects. To correct: Install a screen door with a self-closing mechanism, and keep the door closed. Temporary correction: Person in charge closed the door. This is the 4th inspection in a row this violation has been sited. A 0 citation will be issued if the violation is not corrected in 30 days.
