Inspection Information

Inspections are based on regulations that are designed to eliminate risk factors for food borne disease. Each violation of these regulations is listed under the inspection.
Violation Types
Priority (P): The highest risk violations which are directly related to an increased risk of foodborne illness. Examples include improper handwashing, unsafe food temperatures.
Priority foundation (Pf): Violations that can create a high risk (Priority) violation. Examples include lack of soap at a handsink, no calibrated thermometer, no test strips to check sanitizer levels.
Core (C): Lower risk violations. Examples include general maintenance of facility (floors, walls, ceilings).
 
Correction Requirements: (P) and (Pf) violations must be corrected immediately when possible. Follow-up inspections occur to ensure all of these violations have been resolved if not corrected during the routine inspection. (C) violation corrections are verified at the next routine inspection.

  3-501.19 - PRIORITY FOUNDATION
 Violation Comments:Squeeze bottles of house made pizza sauce and ranch were stored on the counter without a label indicating the time left before it must be discarded. The person in charge stated they had just been placed on the counter. All potentially hazardous food that uses time as control for food safety must be label with a time to be discarded after 4 hours to limit the growth of harmful bacteria. Corrected on site: The person in charge placed a label on the pizza sauce and the ranch so that it will be discarded in 4 hours. Note: The person in charge stated that the pizza sauce and the ranch have been tested for PH. In order to leave the pizza sauce out at room temperature, the facility must also complete a haacp plan.

 Violation Comments:Several containers of house made ranch were found covered while cooling at the time of the routine inspection. The person in charge indicated they were made 20 minutes prior to the inspection. Potentially hazardous foods must remain uncovered during the cooling process to help ensure they are rapidly cooled to 41F or less in the required time to limit the growth of harmful bacteria and toxins. Corrected on site: The person in charge uncovered the containers for the remainder of the cooling process. Ensure staff are retrained on this item to ensure future compliance. This is the second time in a row this violation has been cited.

 Violation Comments:The cutting board in the main service area near the register has many deep grooves making them difficult to clean. Cutting boards with deep grooves can harbor bacteria and are difficult to clean. To correct: Resurface or replace the cutting board.

  6-202.15 - CORE
 Violation Comments:The 2 back doors to the establishment where deliveries are received were not tight-fitting at the bottom of the door frames. Light was seen coming through from the inside of the doorway at the bottom and sides of the door. There was also a small (golf ball size) hole in the wall next to the back door that is no longer used. Outer openings must be protected by solid, self-closing, and tight-fitting doors to prevent entry of pests. To correct: Replace the door sweep around the 2 doors to ensure a tight fit and fill the hole in the back wall. Correct within 14 days. Correction will be verified at the next routine inspection.
