Inspection Information

Inspections are based on regulations that are designed to eliminate risk factors for food borne disease. Each violation of these regulations is listed under the inspection.
Violation Types
Priority (P): The highest risk violations which are directly related to an increased risk of foodborne illness. Examples include improper handwashing, unsafe food temperatures.
Priority foundation (Pf): Violations that can create a high risk (Priority) violation. Examples include lack of soap at a handsink, no calibrated thermometer, no test strips to check sanitizer levels.
Core (C): Lower risk violations. Examples include general maintenance of facility (floors, walls, ceilings).
 
Correction Requirements: (P) and (Pf) violations must be corrected immediately when possible. Follow-up inspections occur to ensure all of these violations have been resolved if not corrected during the routine inspection. (C) violation corrections are verified at the next routine inspection.

 Violation Comments:Ice machine was broken and not dispensing ice properly causing there to be minimal ice available in the machine. Equipment must be maintained in good repair and proper adjustment. To Correct: Repair the ice machine so that it dispenses ice per the manufacturers specifications.

 Violation Comments:Water was actively dripping from a ceiling tile in the back of the establishment into a bucket. A facility must be properly maintained to ensure cleanliness and safety. To Correct: Repair the leak in the ceiling.

 Violation Comments:The ventilation system above the grill had an accumulation of grease and food debris. All parts of a ventilation system must be cleaned at a frequency that prevents buildup to protect food and equipment from contamination. To correct: Deep clean the ventilation system.

 Violation Comments:Multiple cutting boards throughout the establishment had deep gashes and discoloration. All cutting surfaces must be in good repair to ensure they can be adequately cleaned. To correct: Resurface/replace cutting boards.

 Violation Comments:The soda machine drip tray's drain (in the self-service area) is not properly draining, leaving sitting water in the tray. Plumbing must be maintained in good repair. A drain not functioning can leave sitting water that can lead to mold growth. To correct: Fix drip tray drain for the self-service soda machine so it drains water properly.

  5-205.15 - PRIORITY
 Violation Comments:Not corrected from previous inspection. The soda machine in the customer dining area's wastewater pipe has fallen into the basin of the drain pipe, making it an air break rather than an air gap. Plumbing must be maintained in good repair and according to law. An air gap of at least one inch on drain lines must be provided to prevent backflow of sewage. To correct: Have an air gap installed between the wastewater pipe and drain pipe of the customer dining area soda machine. An attempt was made during the inspection but staff lacked a saw capable of cutting through the pipe. Send a picture of installed air gap underneath the dining area soda machine to Sguikema-bode@miottawa.org within 7 days of receiving this email.

  3-501.16 - PRIORITY
 Violation Comments:The softserve in the softserve machine was held in the machine at 46F and after an hour temperature had increased to 47F. Potentially hazardous foods (time and temperature controlled for safety) held cold must held at or below 41F to limit the growth of harmful bacteria and production of toxins. Corrected on site: Softserve was discarded and employees were instructed not to use machine until it is repaired.

 Violation Comments:The softserve machine was holding softserve at a temperature above 41F. Equipment must be kept in good repair so that it can properly complete its function and hold food at a safe temperature. To correct: Repair/replace softserve machine.

 Violation Comments:The customer side soda machine's wastewater pipe has fallen into the basin of the drain pipe, making it an air break rather than an air gap. Plumbing must be maintained in good repair and according to law. An air gap of at least one inch on drain lines must be provided to prevent backflow of sewage. To correct: Have air gap installed between the wastewater pipe and drain pipe. For proof of correction: Send a picture of installed air gap underneath soda machine or a receipt from plumber showing that pipe is being worked on to Sguikema-bode@miottawa.org within 10 days of receiving this email.

 Violation Comments:The customer side soda machine was leaking underneath, causing puddles to form underneath and around the soda machine. Plumbing must be kept in good repair so that it can meet the water/sewage disposal needs of an establishment. To correct: Have soda machine's plumbing fixed so that it no longer leaks.
  4-601.11 - PRIORITY FOUNDATION
 Violation Comments:The main slicer used for roast beef had thick grease and discoloration at the top of it. Equipment, surfaces, and utensils must be kept clean and free of debris to prevent contamination of food or equipment. To correct: Have top of slicer cleaned. For proof of correction: Send picture of cleaned slicer to Sguikema-bode@miottawa.org within 10 days of receiving this email.
